Wouldn't it be neat if we could state how much time we would like to spend on a gathering project, in addition to the amount we wish to recieve? So that you either specify an amount or a number of hours you'd like to spend on a project.
It's pretty annoying trying to calculate the amount you'd be able to gather in a fixed time due to skill level, and equally annoying to end up on 99% at a tick.

It would be more logical but I wonder how it would be implemented in practice...

There also other factors as tiredness and damage, or someone can help you to finish project faster. But I have idea of simple solution. When you create any project it should give you also calculated number, how much your character can gather/make per day in his/her current skill, damage, and tiredness state.

This is a neat suggestion, and it doesn't seem that complicated in theory. You just need to reverse engineer the forumula - basic algebra.

Rather than "instead" could we not do "in addition to"?
Allow people to get X amount of Y or allow them to farm for Z amount of time and give whatever X of Y would be, this way?
