I use the * for emotes, mainly because the wiki page recommends it. In other games where it's appropriate to describe emotions or actions but there's no standard, I tend to use <and>.
As for using "he" or "she", I find that totally redundant. Who else could you possibly be referring to?? It's hardly appropriate to be specifying the actions or feelings of other characters.
But basically, everybody should do what they feel comfortable with *shrugs* after all, as long as the meaning is clear it hardly matters.

I'm bumping this cuz I think we can get some good discussion going, as I add to it.
I use *. However, I alternate with different characters between saying *she smiles* and *smiles*.
To add to this, when speaking one on one with another character, some of my characters get emoted *looks at him/she looks at him* and some get emoted *looks at XNameX/she looks at XNameX*.
Also, with my sentence structure, sometimes I end my characters sentences with just a plain period. But with other characters they don't end their sentences like that...They do it differently..You know what I mean?..
Hehe And this is all to make sure that unless I -want- you to know who I am, you have no clue, cuz you can't match my style of RP between my characters. Yes, to my fans, its all to trick you.
-Was wondering if others do things similar than this, or if you tend to use the same type of roleplaying techniques for each charries?
{{{Told you I'd expand on the topic somehow}}}

I tend to think of them as actions rather than emotions, and that's how pretty well everybody seems to use them. After all, *he feels sad* is bad role-play as there is no way that sadness can be directly sensed. Instead I use something like, *he shakes his head sadly and his eyes film over with moisture*
The other thing I do if I think of it is try to think of how visible those actions are. You might be talking personally to another person, but if you shrug or wave your arms angrily then everybody can see it So I break off what I'm saying personally and say to everybody *glares angrily at the wolves*, then go back to speaking personally.
Or... I used to do that. I've been having trouble playing for more than a few minutes per day, which doesn't make for good RP. *frowns and lets out a frustrated sigh*

Ah, so I'm not the only one that does this. I think it started when I realized that two of my characters were interacting with characters played by the same player. Or I may have just been paranoid from the beginning. I've run into that particular player's characters an awful lot, though, which gets a little annoying for me.
Even without visiting the forums (which I do often) and matching characters to players, it's often easy to figure out when characters are played by the same person (who, in my mind, I refer to as "X's Player," X being the character I see/interact with the most). Since I don't want it to be that easy for people to match my characters to me, I vary between *he smiles* and *smiles*, use more complex/detailed emotes for some and simple, short ones for others, and vary grammar/punctuation (though my inner grammar nerd won't let me take that one too far).

*shrugs* Those who know my charries know that I'm rather inconsistant with he shrugs and shrugs.
I do however tend to keep them basic that way others can interpert how they will. If my character is upset I may do something like this
*hangs his head* I have expanded this before as *hangs his head in (insert fealing)* Shame is my favorite for hangs head... certain char for that.
Well I guess I do both and I clearly use ** and not the other types.

The first few days after signing up I was a *smiles*, but after reading some historical threads on the forum I switched to being a religious *he/she smiles*.
My reasoning is quite different, perhaps.. in that it reminds me of the separation of character and player every time I type it. I guess that's a little immersion-breaking, but then so is nervously checking my player minute counter every few seconds, so I let it slide.

Most of time I go with *he smiles*. It used to be *you see him smile*.
*he smiles* is *smiles* from someone elses point of view. If you smile your thinking something along the lines of "I'm happy", when someone sees you smile they are thinking "what is he so happy about". If you just use the simple *smile* emote, your making other characters decide whether or not they want to see it.
Long story short,
If you tell some one they suck and use the *smile* emote, they could either take it playfully or decide not to see it and kill you

You say: "You suck! *smiles*"
or
You say: "You suck! *he smiles playfully at (name)*
Number won can be inturpreted 'wrong' while numbr two means exactally what you intend it to mean.
Which is why I use both. Depends on the character and my mood.

I use whatever comes to mind first in the context of what I'm saying. If it reads well, I'll do it. Although I think I tend to start longer emotes with a personal pronoun and just use bare verbs for shorter, intermittent emotes.
Examples:
I think you might need to come outside practise your conversation skills *smiles* Oh and I finished copying that key for you.
*She walks into the center of the town, her face set and expressionless. At her side is a gleaming diamond-encrusted steel saber, and one hand is placed firmly on the handle.*
Edit: BTW none of these are based on real events or characters, I just made them up.

Eh, I think the worst ones are *You see him coming out of the door with an armload of wood* -- trying to copy the game's event format, I assume, but it just fails.
How about this idea.
You say: "*He exits the building carrying an armload of wood* This is a lot of wood! *smiles*"

I usually do stuff like.
You say: *dances and stands on his hands, then sticks his tongue out. He then rolls to the other side of the world, kissing his own feet*
And sometimes he/she at the start as well.
*he dances blablablablalabllablbalaa and so on*
And yes, the "you see" ones are DUMB and STUPID and so are *shows *** a *** * because that doesn't give *** the chance to ignore the *** he is shown.

Or this
*He exits the bulding with armload of wood, splinters peeking through his arm hair* It's been a long time since I'v had this much wood *a naughty smile creeps on upon his face*

Lol Wiro, I love your comment about showing someone something. If I do that Ill be like.
I found something interesting *holds it up so he can see*.
I find that I'm giving them the choice to look or not lol. And it'll open up RP from players.
