You see someone adding iron to copying key XXXXXX
I just thought it's a bit funny you can see the number of the key when they're copied. I would imagine it being such a small thing that outsiders couldn't spot it. So could it be hidden from people other than the one doing the addition? Then again, it needs to be visible in the projects... hmm... But perhaps checking the projects list is like having a closer look?

What you're saying is true, but you can't hide copy project from the others - I'll describe one example why not:
1234-56.01: you see man in his therites dies
1234-56.04: you see woman in her twenties picks up a key no 2342143
1234-56.05: City guard says: "Please give back the key you took from death body immediately!
1234-56.06: Woman in her twenties says: "Of course, I just wanted to protect it from thiefs."
1234-56.08: you see woman in her twenties pass key no 2342143 to city guard
Anyone noticed anything? She could start copy key project. The best thing
is to start such project on a boat, so we can travel around the world and make that key ten years later.

Oh, the project would be visible, but the number of the key wouldn't. Besides, it already says just "a key" instead of "key n:r XXXXXX" when handing things. The scene could be like
You see a woman in her twenties pick up a key.
A man in his thirties says: "Could you hand that over please? It doesn't belong to you."
A woman in her twenties says: "oh, ok"
(Starts a copy project.)
You see a woman in her twenties give a key to a man in his thirties.
(A bit later: )
You see a woman in her twenties add some iron on copying a key.
A man in his thirties says: "Hey, is that for the key you just gave to me?"
A woman in her twenties says: "What, no, this is for my longboat... honestly."
Now one problem is that if the numbers are shown on the project list, then she would get caught easily, but if not, then the result of an abbandoned copy key project would be a mystery until completed, and it's a bit hard to imagine that someone would randomly come up with a working key to a lock they have never seen.
