You're seeming to suggest that sexuality can be defined by a number of delineated categories and a final 'don't know' box?
The whole concept of sexuality categories is a social construction, much like gender.
Sexuality can be, and is, something more fluid in nature, not limited by pigeon-hole-ing people into certain categories, and related stereotypes.

Gender is often determined rather easily by looking for dangly bits. 99% of the time, that's a good indication one way or the other. What happens from there, how the bits are used, can happen any which way, and is fluid like you descibe.
Reality was never my strong point.

Ummm...do you know what that means? It means you're not seuxually attracted to any sex or not sexually active. Generally children are asexual up until puberty. Some people even continue to be after puberty usually due to a defect in their hormones.
