At least that is what I think you are referring to since I remember an incident where James Whitmore wouldn't potatoes and took some carrots and sort of pissed off Maily Yumm and made her think that he didn't like her.

I would like to point out that what happened in Rome and in Roman days has no effect on what happens to Cantr or the cultures and societies that develop in them.
Food, color, and sexual preference is not a choice IRL. It just is. You can say you like blue all day but if your really like red well that is it. You can eat a food you do not like but you can never just tell yourself you like it. It has to just happen. You can go on a diet. Doesn't mean you like it.
What happened in Rome was normal human preference not which is a horribly inconvient thing.
So yes. It should be a skill. In that you can get used to anything over time.
Being exhuasted after slicing 20+ people should be left up to role playing but isn't.

And I don't. Food preference, what color you like, and sexual preference should be role played and not programmed.
And I would also totally disagree with you that you don't have any control over any of those. In my personal belief of how the human mind works, one can change anything about how they feel, think, what they like etc...

I would rather be able to choose when my character eats, what my character eats, how much my character eats, etc... And I think that can be better role played then programmed. Now characters can sit down and actually eat at a special event. Plus, that could add to the description. If a character eats too much they will be fat, too little they will be skinny, and just enough and they will be average. Maybe even add in a system of weight. Now when one is getting ready for a trip and they are trying to see who will go they leave fat Gregor behind because he wouldn't fit in the car.

You can always eat whatever you want in the normal amount but only the foods from your native land will you like. They will make you "happy".
Being "happy" is a bonus to working?
The effects of the happiness would decrease over time unless you were absent from your favorite foods. Then you would be unhappy and slowly get over it. But then when your traditional food reemerges you are "happy" again.
