When Making Babies is implemented, will it be part of the skills system too, because I don't think my ego could handle:

You are awkwardly working on project: making baby

...

That would be terrible. And it would probably bash Surly's characters more than anyone else's.

So can you get better in a skill as you go on in the game? I know they don't want to make the skills favor players who have played for a while but I mean if a person is a hunter and hunts every day but sucks at it...eventually they should get better right?

Right.
Just because you're older, smarter, stronger, more talented... doesn't mean you're BETTER.

The way I see it: In most projects there is a skill exp that you get when you work on it. Like if you are at first 'working awkwardly on gathering potatoes', you can keep working on potatoe projects to become better. Anything else also, I think.

I wonder when we will finally be able to see the skills for everything. Seriously, I hate looking only to find it doesn't say.

as for hunting, if you get good at hunting say a cow, does it cross over to the other animals and humans?

Animal hunting and people hunting are two different skills (although both are modified by physical strength, which is another skill, but is not displayed). So your cow hunting skill would make you good at hunting rabbits, but not people.
