RP animals
Umm, there might be animals existant that do not show up in the hunting list because they don't give much useful things. For example rodents and small birds and worms and butterflies. So people might rp seeing them without someone shouting "He's hallusinating, there are no such things in Cantr!" (Really annoying if someone does that.) The same thing with dogs and cats, you usually don't eat them so they are not hunted, but they could be rp'd.

Ravens
But what about ravens? They are know to pick shiny objects, so if a raven was around, small amounts of metals, glass and diamonds left on the ground could vanish. And keys. Then you should have to search for the nest, climb up a tree and retrieve the stolen objects. Hmm, that's like a quest. Those birds could become a real nuisance.. but then again someone might find an old nest full of treasures after many years.

Or even kill it have to kill it rather then climbing a tree and looking in the nest, as they don't actually exist (Well nests) So I don't see how they could be there.

I haven't read the whole thread but:
Gazelle in the desert area's would be good. Same stats as Deer.
Other possibilities: Giraffe's, Elephants.
Fox's & Bears in the Forests/Hills/Mountains
Other Possibilities: Squirrels, Chipmunks
Seagulls at all seaside towns and round boats. Stats between Pigeons and Hawks.
