I'd really like to see more uses for a lathe, and why not also the shaving horse? Currently people make a shaving horse so that they can make logs for their lathe and then they start using the lathe because it doesn't require tools, and they'll be stuck with a peavey and drawknife they need to repair but aren't using on anything.
And I don't think having components would complicate the process too badly if the legs were a set so tables would only consist of two parts, and chairs two or three.
