I didn't want to prevent the coin fun but I too see that steel even 1g at a time not even as a coin could becoming a sort of currency. It's light and very vauleable in most places. Places that have steel in mass are rich aren't they?

It would matter what town you are in. Some towns don't think that gold is good Some think wood is better than gold.

Personally I think you just have to deal witht the fact that in Cantr you can dig up iron with your bare hands. If it bothers you so much just pretend it's laying around from someone else who used a pickax and didn't see it.
