Kippers are actually smoked herring and don't really take a lot of smoking , around 8 to 16 hours, - smoked salmon takes longer ,for instance, about 1 to 2 days .

And now you mention it, yes, herring is definitely right. Ah well. At least I got the right starting letter.

Are they nice? I've never tried them...
