Okay, time to get this back on topic.
I would like to see more farm animals, like cows (which we have some of, but need much more), chickens, perhaps pigs. The ability to milk the cows, and the chickens to lay eggs.
I would also like to see higher numbers of the animals we have, so that killing them for their meat and hide wouldn't deplete the numbers too badly. As long as they continue to be passive like most of them are now. And perhaps the horses could settle down a bit. Unless everyone has an iron shield, there's no choice but to kill the horses.
It would be nice if highly populated places could have a wider variety of animals, and at least one kind that provides hides.

Exactly--the horses are nuts. Way out of control. And with the milk from the cows, maybe that would be required of some baking projects. As well as the eggs. And you could make like scrambled eggs, with optional ingredients such as onions. Then maybe it could have a healing capacity. Who knows?
Or, have raw eggs be a healing food, but with a percentage chance of it backfiring and making you sick. Because atheletes eat raw eggs "supposedly" (or at least they used to before they invented steroids ).

I agree that seeing more animals that could be domesticated and benefited from in non-lethal ways would be great.
Some "uses"
Cows:
- Provide Milk
(in turn a user could also produce cheese, butter etc.? Would make a good industry - Dairy farmers could sell prodcut in exchange for grass etc for cows)
Horses:
- Vehicle
- users could build carts that the horse could then pull
- single users could ride horse as well.
- Tool
- users could build a plow and then use a horse to pull it - maybe this could affect the amount of crop that an area could produce, or accelerate people's ability to pick crop in that area?
- Maybe make some kind of winch or lift tool that users could use a horse to pull out bigger rocks allowing them to harvest rock faster?
(Oxen, Yaks etc could also be similar additions)
MESSENGER PIGEON
Allow users to communicate over distance but with an obvious time hit. Pigeons would have to be trained on which route they follow - so you can't just get a pigeon and say "Find so and so and tell them such and such" but rather pigeons could be used by communities to keep in touch with their various camps. A user would have to train the pigeon by moving one location away and sending it home, then two locations and so on until the route is "learned" by the pigeon. Then people could send notes back and forth over a redetermined route at a slightly faster pace than walking.
Also make pigeons vulnerable to attack from other people as food source. If you really wanted to make it interesting allow people to trap the pigeon and steal/modify the note.
