What in-game consequences would there be for my character if out-of-game, I was to go away for two weeks and not log in?

As a matter of fact, two weeks is also less than the time-out period when not on leave. Normally an account is deleted after 3 weeks of inactivity. Putting an account on leave, which can last for up to 90 days, will prevent the time-out.
So you don't need to do anything in particular, though you should make sure your characters have enough food and are in relatively safe places.
