You can't really aim a catapult at an individual person. You aim it at a town and maybe it will hit one of the buildings. Yeah, a person could get really unlucky, but we could just say that being struck full-on by a catapult stone is so improbable that it simply doesn't happen in Cantr, like being struck by lightning, although if you are outside, you might be subject to random "splash damage" when a catapult attacks the town. On the other hand, a catapult stone should flatten a grass, reed, or mud hut in one hit, auto-killing everyone inside it (but again, the catapult is aimed at the town, not the individual buildings). Next time head to the "bomb" shelter when the empire down the road decides they need more "breathing space".

Instead of a catapult being mounted on a vehicle, it could itself be a land vehicle, slower than a wooden cart. It could be loadable onto a large ship once land vehicle to ship docking is enabled.

Well yes, I guess personal attacks are a tad unrealistic. But one should in theory be able to target a "region", like a certain cabin, building....But still have good odds of missing.

I like the idea of this targeting in a way, because perhaps you could target a sail, or mast. If you could slow them down slightly, it would allow boarding perhaps.

Might solve our room barricade exploit if you can catapult attack the building :P
