I don't think it'd be neccessary to make a new project from butchering the animal. I think you should get a list of the objects - like in the objects button - of what are takeable from the carcass. If you have an axe, you can take more meat, but it's hard to take anything gently with an axe, so the bones, sinew etc. would take some damage, and you'd get less bones and sinew etc.
With a knife, you would get a bit more bones and meat etc. than you would with your hands.
And well if you have no tools you are able to get the products from the carcass, but less than with any tool that would help gathering the products.
To compare this to real life:
Just think about it, you would be able to to get some bones and meat out of a fallen deer, if you'd happen to see a fallen deer and you'd happen to want to take some bones out of it, but it'd be pretty much easier if you'd have an edged tool, but if you'd have a club, what good would that do?
