Bobby Fisher's favorite move. This move opens up the diagonals for the queen and bishop to come into play, and also takes a stab at the center of the board, which is a valuable region to control. A good choice.

This move is solid, but passive. It blocks in the Bishop on f1, but protects the pawn on e4. However, this is unnecassary at present becuase that pawn is not under attack. Usual is Nf3, which brings a piece into the struggle and attacks black's undefended pawn. Pe3 is unaggressive, but not bad.

Unorthodox. The purpose of this move is uncertain. It introduces the possibility of putting the black bishop on b7, and claims queenside space, but has little to do with black's first move. On b5, this pawn can become a tactical target, which it eventually does

This is a fine move that develops a piece, but usually development of bishops is held off until they have a clear purpose for development. Knights usually come out first because their choice of square is limited anyway. This is still a fine move, however.

An interesting central blow. The reason for this choice is uncertain, however, because central blows in the opening tend to favor the more developed (in this case, white, who has a piece out already). This move brings the black queen to a square where she becomes a tactical target (which happens later hehehe (I hope you like my blatant foreshadowing))

This move is somewhat questionable because it trades pieces in a situation where black is already down. This tends to make the difference more noticeable. It's like fighting 1 vs. 2 rather than 119x120.

14. Nf3 developing a knight rather than wasting time going after another pawn. (on a8 ) This pawn is not needed though as white is ahead enough to win.
14. ...Nc6 black appropriately protects both a8 and e5 at the same time.

Well it all depends on the specific position. Sometimes, trading a bishop for a knight is a good idea, and sometimes the bishops become far too valuable to be traded for a knight. It depends on what type of position it is. If the pawns are mostly locked together, the bishops often become cramped and useless, while the knights don't because they can "hop" over the pawns so to speak. If the position is open, bishops are good becuase they can utilize long-range powers while the knights are more often worse becuase they are short range.

The problem of course is deciding which is better in the position, the knight or the bishop? In that particular position, it's only white's third move, so it's hard to say; the position probably needs to be defined more. So until you figure out exactly what you plan to do with the bishops, you might as well not move them unless you have a specific plan in mind for them, since if needed they can instantly go a long distance. Each knight, though, can only move short range, so you might as well get them out first, seeing as you're going to move them eventually, and when you do its probably going to be to the same square as if you had moved them a lot earlier. (c3/c6 and f3/f6 are usually the knights' best squares becuase they give the most options) On the other hand the bishops don't have a set 'best' square; their best square depends on the position. So as a general guideline (and there are exceptions) you might as well wait on the bishops until you know where they will be best placed; knights just tend to go to c3/c6 or f3/f6, so you might as well get that part over with

Obviously there are a host of exceptions and it all depends on the position, but these are just general guidelines. Hope they weren't too confusing

Oh and as for an earlier attack, if the opponent is setting up a nice defense, unfortunately I doubt a single bishop can do much on its own And like I said, it's too hard to tell where the bishop will be most effective on white's third move in that position.
