How do you actually write in them or copy stuff into them?

You use the envelope option on a note to place it inside the book. Once it's in the book, you can click on the open-paged book icon and see/edit it within the book. If you click the "change order" button below the notes in the book, you can drag the notes into the order you want them in.
ETA: This only works with unbound books.
