Why are vehicle projects removed when the vehicle leaves? Now I have to start all over again... :S

I think he was renaming the vehicle or something and the project got cancelled when it moved?

I know lock picking projects aren't canceled when the vehicle moves.

So the vehicle naming project is still there at the former location, presumably, just like the lock picking ones. Neither makes sense, but I guess it's too difficult to program things otherwise.
