Brownies are plenty good if made from scratch, but I would
rather have some good ole apple smoked, barbecue baby back ribs.
I'll tell you something. You bite into that first rib and that smoke
ring is to the bone all the way round... that's damn good eats.
After the ribs and a few beers and room permiting I may eat a
homemade brownie, none of that boxed junk. And damn, better yet,
real home made, from cream cheese, baked in the oven, cheesecake.
One tip on ribs.
Never put sauce on raw ribs.
Put the sauce on after they are nice and smoked and put it on thin.
Then back over some real hot coals for a couple more minutes on each side.
You want to accentuate the smoke flavor, not smother it.
Another tip, to taste (optional).
Vinegar:
Don't shy away from using vinegar on ribs.
Pour some vinegar in a bowl, about a half cup.
Get your hands in that vinegar, palm side down, and get them all nice and vinegary.
Take those hands and smear that vinegar all over them ribs nice and good.
Trick is, you want to get a little vinegar on them ribs, just a little.
This is a trial by doing kinda thing.
Go slow and small and you'll figure how much vinegar to use.
Tip 3:
Use green wood, not soaked chips.
You can use chips, but soaking will not help.
Wrap dry chips in foil, then put on coals or flame.
Green wood, no need to debark it, has so much liquid flavor goodness in it.
Never use evergreen. Will taste like tar.
All fruitwoods, maples etc.. are good.
Let your fingers and google find what wood is suitable for smoking.
Dry chunk, green and dry chips(in foil) will work on any charcoal, gas or, well pretty much all grills and smokers (any fuel).

Shame shame shame. I use store-bought sauce. *hangs head in shame*
*grins* Some of them can make some damn good sauce.
I will probably not be back with smoking ribs/meat. You can search and
find it better. Once you find your way, there is no turning back.
