I've been inspired...and surprisingly my dad hasn't had lox before or even heard of it. He's really into gourmet cooking and is fairly knowledgeable about worldly foods so it was unexpected. Anyway, he talked me into getting a couple fillets of salmon at the store so we're going to attempt a quick-n-dirty lox. I'm afraid it won't have enough time to properly brine but we'll cold smoke it tomorrow along with some cheddar cheese. mmmm!!
Oh, and he made some kickass ribs and corn on the cob for dinner. I need to visit him more often.

WARNING -- TMI AHEAD!!!! You have been warned! And Snickiedoo, stop reading this post this instant, young lady!
Speaking from the other (i.e. male) side of this, I can attest this is true. Five kids (each accompanied with 8 months of morning sickness and two years of infant/toddlerhood), followed by a year of my brother living with us, and three deaths (including his) of close family members left us with about 18 straight years of... well, not much. This past year, on the other hand, has been the BEST in our marriage, in that department. 20+ years years? Well, I'll let you know that statistic in a year. But yeah, you guys out there, assuming you have the guts to stick it out... you better make sure your mojo is well-prepared for "no young kids" phase. If you don't keep yourself up, it can dang near kill you (but what a way to go!)

Haha....I live in one of the most hick states (by reputation, anyways).
South east....very south, past the middle of the US by a good amount.
