Recipe of the Day
Veggie-mushroom-cheese Pie
Base
2.5 dl flour (I used rye and graham about half and half)
vague amount of butter (Web says 150 but now that I thin of it, I must've used less than 50 and it turned out just fine)
1 dl water
2 tsp baking powder
a dash of herbal salt
Filling
1 onion, chopped
1 carrot, shredded
1 potato, shredded
some zucchini, shredded (more than of the carrot and tater)
2 cloves of garlic
oil for frying
abt 100 g canned mushrooms
cheese, shredded
2 eggs
seasoning (I used general barbeque mixture and lemon pepper)
Tools needed (in order of appearance):
one or two mixing bowls
a grater
a baking pan (I used a china one)
a peeling knife
a cutting-board
a good knife for chopping
a frying pan
a spatula for stirring (wood preferred, steel can damage teflon surfaces)
a fork or other mixing tool
a timer
Oven temperature 200 C, good to warm up before the last possible moment but I did notice it doesn’t take that long to heat up.
For the base, mix the dry ingredients in a bowl, then add butter (it’s easier to handle when it has warmed in room temperature for a bit), squeeze it with thy bare hands and get all messy, then add water and mix some more. It should result in a nice dough. You can put some shredded cheese there too but I didn’t notice it much.
Get a baking pan (preferably before messing your hands totally), butter it up, get some flour to stick to the buttered walls so that the pie won’t get stuck, then put in the dough, in little bits spread evenly around the bottom, then pat them flat to create a nice even surface. Some should go up the walls too.
For the filling, peeling and shredding the veggies before starting to fry them might help to avoid burning anything or using excessive amounts of oil. But if you think you’re so slick, might as well put in the onions and shred the other stuff in order of hardness, which is carrot, potato and zucchini, just like the list says. They’re all fried ‘til they’re nice and soft.
Then you put them in a bowl and shred in some cheese, as much as you like, and add the mushrooms. Break in the eggs, making sure they’re not rotten since it would totally suck to ruin the other stuff with such a silly thing, and mix.
Pour the veggie and egg stuff into the baking pan on top of the dough, and even it out with a fork or what ever tool you happen to have in hand. Shredding some more cheese on top might make it look better, but that’s optional.
Put in the oven for 40 minutes. It shouldn’t burn but best to check on it every once in a while. When it’s ready, it’s going to be a bit brown on top and smells like food. There’s enough for 8 pieces but if the eaters are hogs then just four or five. (I had a quarter for lunch and it was tasty.)
