If I select a project like gathering wood under Activity do I
also need to go to the Location screen and select wood. Are
these two screens just different ways to specify the same thing?
Thanks.

No, these two screens are completly different.
The Locations screen lists all resources at that particular location. By clicking on the image, you can start a new project for gathering that resource. Using this page, it will become YOUR project, so all materials you gain go to you.
The Activites page lists ALL PROJCETS previous engaged. Working on one of these would, essentially, be helping someone else with their project, finishing up unfinished projects, or resuming projects of your own that you've stopped working on.
Does that make sense?

Yes, that makes perfect sense. Thanks.

Just remember that when completed, unfinished projects end up on the ground and not automatically in your possession.

So, if I select a partially completed project (to save time), complete it and then pick up the stuff am I likely to be accused of being a thief and shot by some vigilante?

Depends on the town. We can;t tell you more than that.
(note: should really be in general support, perhaps, but I'm leaving it here)
