The wood collection screen doesn't mention it! Do they still work and if so how much can you gather a day?

Nope... Your'e not going potty
I remember it too, even heard a conversation ages ago between someone asking what an adze is for, and someone replied that the only thing they knew it could be used for is harvesting wood...
There's no other use, as for making weapons, machines, furniture etc... At least, not so far as one of my character's with his list knows (

I could have sworn I say a project requireing an adze a while back, but I don't remember what... I have characters trying to build all kinds of things. From what I remember them being in real life, they look kind of like like a farming hoe, but about half as wide and obviously sharp. You used them to carve and chop long shallow furrows in things like logs for cabins and hollow out canoes. I've seen log cabins and canoes in Cantr, no idea if they need an adze though.
Reality was never my strong point.

Could we have the Adze back as a way for gathering wood quicker please?
If not maybe a tool that only requires Iron and not steel?

I have no idea but it's going to need some extra additions.
Eg Lumber that needs to be obtained using axes or saws. Then turned into timber with one of them 2 man operated saws. That would be cool, needs 2 people to start the project?
I prefer the simplicity of wood though!

I think you have that backwards. The timber would be the trunk of the tree which would have to be chopped down; you would then use the two handed saws to make the lumber.
