Why? I assume you mean customizing furniture? Because it's not like you can disassemble custom clothing.

What's needed to take apart a lathe, and do the logs and blade stay intact?

General rule is that 100% of objects and 50% of raws are returned. The only object giving back less than 50% of resources is a label. Some do return more.
The only objects giving back less than 100% of objects is a hammock.

Default parameters are used, that means the same tools are needed as for building it.

I think some new projects return 100%, like mirrors, to simulate being able to move them to a different room. I'm not entirely sure, this was a while ago. Maybe I'm remembering wrong.

There's a lot of machines I've been curious about but sadly most towns won't allow you to take apart everything in their workshop to test that out. And most disassembly projects are so time consuming anyhow it's hard for me to muster up the effort.
