Can someone tell me the days of labour to build a van. Included all gathering rates, etc etc.

No, There is waaay to much variation.
Are you collecting with tools? Do you factor in time to build the tools and machines you will need to build it? Do you need to collect all the resources to build the tools and machines? Will you be building tools to collect those resources? Let alone things like travel time to get all the resources.

it would take something near, 350 days. 17 and a half years... almost a full year Real Time.

To get the answer, ie it's sellable cost, I think you need to factor in the maximum gathering rates and making all the tools etc from scratch. It'd be bloody expensive to buy one in Cantr, few places would have the resources to pay for one.

It's all about trade.

I disagree. As Snake_byte said, it's all about trade. If in-game someone has multiple vehicles they don't use and that aren't worth much to them but really wants some other resource or item they can't acquire or build themselves (let's say tea for the sake of argument) then a van might be worth 2000 grams of brewed tea, or even 200 depending on the value the seller (and the buyer) assigns to both the vehicle and the offered resource. Unless uniform currency enters the game (which I don't believe it ever will) a straight "days of work" comparison to derive purchase price is ineffective and impractical.

To the OP
If this is about building for your own character, then be prepared for a long, long journey towards achieving this. There are other ways than manually gathering, most towns have the resources needed and will probably trade or have you work for them.
If it is about buying/selling one,
There are too many variables besides the ones already listed to give an accurate answer. Location, need, availability, cost effectiveness...all those play a huge role in buying/selling.

He asked for days of labour. Not trade cost/value.

I roughly calculated it already above... about a RL year to worst case maybe another 6 - 8 months.
