Animals Critical to Culture/Survival

Sometime in the future, I'll begin the process of adding new species and removing existing species from some islands. The reason for this is that the fewer islands that each species occupies, the easier it will be to track their populations. I'm hoping to cut each species down to 1-3 islands each, (and if more than one, the islands will be similarly populated by characters.)
In order to facilitate this, I need to know what animals have made a mark on the culture of the island that your characters live on, and also if there are any animals on your island that are absolutely critical to survival.
For example, K-isle wouldn't be K-isle without its buffalo.
As for extinct species (Akypor rhinos, MacGregor lions, K-isle Pelicans, etc), my question is, do you want them back? Also, K-islanders, do you want any predators? (I'm leaning towards no).
For those of you ready to panic, don't worry. Anything I remove will be replaced with something else semi-equivalent. I know horses are often the only source of food in forests, but horses lead the animals as the most wide-spread,, and I'm honestly sick of working with them. My long-term goal is to tackle one island at a time, and provide each island with at least two animals per terrain type. Bottlenecked regions, like the forests on Treefeather, will get unique species (similar to isolated regions in RL, like the galapagos) adding to diversity.
I really need to know, because I don't want people screaming at me when I take away your favorite animal. Making interesting ecosystems on each of many islands will take considerable time and effort, and by the time I'm actually implementing it, it'll be too late, so I need to hear from you now.
I'm also welcoming suggestions for replacements on your island. If I'm allowed, I'll post of list of animals that will be affected by this change so you can make useful suggestions for alternatives.
I would greatly appreciate it if those of you that are bi or multi lingual to translate the gist of this into your other language and let your friends know. I'm really handicapped when it comes to the non-English islands. Thanks.
This is not something that will be happening soon. I'm currently working on adding more cats, and then need to do small mammals, reptiles, amphibians, bears, etc, etc, etc.
