If animals dropped resources when they died of natural causes, it might make life easier for places that have limited hunting options. Also, culturally, it would allow places to utilize products from their protected sacred species.
Edited for clarity.

You mean upon natural animal death? I'm not quite sure if I follow otherwise.

The idea is not bad, but wouldn't this spam the world with certain resources even more?
Then again, if animals dropped every type of resource, we could have some kind of small scale domestication. You wouldn't have to milk a cow, but instead pick up a deceased cow's milk. Doesn't sound too plausible, but at least we would have the principle "many animals = great return" established. This could easily make hunting obsolete though.

I doubt hunting would become obsolete. It's a sport, form of entertainment, way to increase your skills, something to talk about, etc. It would help in places where hunting is already restricted, though.
How often do animals die naturally? I know that's a very broad question and depends on the location. Some will have at least one death per day and others might not have any die for several days.

Currently, the longest lived animal is a mammoth, at 118 days. However, lifespans, right now, are a meaningless variable (they should just be constant under the current system). They could be set to whatever we wish, and reproductive rates altered to adjust for the change.
